A Birthday Cheesecake

I make a really good cheesecake, however, I have a friend who is diabetic and taking insulin. Cheesecake is her favorite treat. I have promised to make a cheesecake for her birthday. Is there a baked recipe with out gelatin? She said she wants the real thing, I know it isn't good for her. I want it to look and taste traditional, anything come to mind?

There are many really good recipes that would fit what you're looking for. One that came to mind though is the New York Style Cheesecake II on the plain cheesecake page. I got many great reviews for that cheesecake and since it's a typical plain cheesecake, you can decorate it in any way you prefer.

I hope it whichever one you decide on turns out and I'd love to hear how you and your friend like it.
