Amazing Cheesecake Bites



Amazing Cheesecake Bites Crust:

3/4 cup dry bread crumbs

3 tablespoons melted butter

Preheat oven to 300 degrees. Spray 5 miniature muffin tins generously with nonstick cooking spray. Combine the bread crumbs and butter until moistened press a small spoonful into bottom of each muffin tin. Bake in 300°F oven for 8 minutes.

Filling:

2 (8 ounce) packages of cream cheese, softened

3 eggs

2 teaspoons flour

1 cup sour cream

With an electric mixer, beat the cream cheese until smooth. Blend in the eggs one at a time then add the flour and sour cream. Place 1/3 of the batter into 3 separate bowls.

Smoked salmon filling:

1/3 cup finely chopped smoked salmon

1 tablespoon chopped fresh dill

2 teaspoons lemon juice

Fresh dill sprigs

Stir together the above salmon filling ingredients and blend into the cream cheese mixture in the first bowl.

Pizza filling:

3 tablspoons tomato sauce

4 tablespoons grated Parmesan cheese

1/2 teaspoon basil

1/4 teaspoon oregano

1/3 cup finely dices pepperoni

1/4 cup finely diced sweet red pepper

Slivered of sweet red pepper

Stir together the pizza filling ingredients and blend into the cream cheese mixture in the second bowl.

Southwest filling:

1 tablespoon chopped fresh cilantro

1 tablespoon lime juice

1/2 teaspoon chili powder

1/4 teaspoon ground cumin

1/4 C. finely diced spicy sausage

Stir together the southwest filling ingredients and blend into the cream cheese mixture in the third bowl.

Spoon 1 tablespoon filling over each tart base and bake at 300 degrees for 20 minutes or until filling is set. Cool to room temperature on rack then cover and refrigerate for at least 2 hours.

Before serving, loosen the cheesecakes from the muffin tin and arrange on a plate. Garnish salmon cheesecakes with dill sprigs and the pizza cheesecakes with red pepper slivers.

Place at room temperature 30 minutes before serving.

Makes 60 appetizers

(If you prefer only to make one of the above fillings instead of all three, just triple the recipe for the filling you choose)
