Amazing Chocolate Cheesecake

Amazing Chocolate Cheesecake Crust:

2 cups chocolate sandwich cookie crumbs

2 tablespoons melted butter

Combine cookies and crumbs and press firmly into the bottom and up the sides of a 9 inch spring form pan. Set aside.

Filling:

4 (8-oz.) packages cream cheese, softened

4 eggs at room temperature

1 and 1/3 cup granulated sugar

2 t. vanilla extract

1 and 3/4 cup semi-sweet chocolate chunks, divided into 1 cup portion and 3/4 cup portion

1 and 1/2 cup coarsely crushed chocolate sandwich cookies

1/3 cup whipping cream

Preheat oven to 325 degrees. With electric mixer on medium speed, mix the cream cheese, and sugar until well blended. Add the eggs one at a time and beat slightly until just blended after each addition. Stir in vanilla, one cup of the chocolate chunks the and coarsely crushed cookies. Pour into the prepared crust.

Bake for 55 minutes at 325 degrees or until the center is almost set. Allow the cake to remain in the oven after the oven is turned off, for about 1/2 hour (leave door slightly open.)

Remove cheesecake from oven and loosen the cake from the edges of the pan with a sharp knife. Don't remove the rim. Cool to room temperature and then refrigerate for at least 6 to 8 hours before removing the rim of the pan and and serving.

Right before serving, combine the 3/4 cup chocolate chunks and the whipping cream in a mcrowavable bowl and heat on high for one minute and then stir until the chocolate has melted and it is smooth. Pour the melted chocolate over the cheesecake and enjoy.

Serves 16.
