Apple Nut Cheesecake

Apple Nut Cheesecake Crust:

1 cup graham cracker crumbs

3 tablespoons granulated sugar

1/2 teaspoon cinnamon

1/4 cup melted butter

Preheat oven to 350 degrees.

Combine the crumbs, sugar, cinnamon amd butter and press into the bottom of a 9 inch spring form pan. Bake at 350 degrees for 10 minutes and set aside.

Filling:

2 (8 ounce) packages cream cheese, softened

2 eggs at room temprature

1/2 cup granulated sugar

1/2 teaspoon vanilla

With electric mixer on medium speed, combine the cream cheese and sugar until well blended. Add the eggs one at a time blending well after each addition. Blend in the vanilla ad pour over the crust.

Topping:

4 cups apples peeled and thinly sliced

1/3 cup granulated sugar

1/2 tespoon cinnamon

1/4 cup nuts of choice (I recommend pecans or walnuts)

Toss the apples with the sugar and cinnamon that have been stirred together. Spoon the mixture over the cream cheese layer and sprinkle the top with the chopped nuts.

Bake at 350 degrees for 1 hour and 10 minutes. Loosen the cake from the pan by sliding a sharp knife around the edges. Don't remove the rim.

Cool to room temperature and then refrigerate for several hours before removing the rim and serving.

Serves 12.
