Baked Cheesecake RecipeWarm Fudge Cheesecake Crust: 1/2 cup softened butter 1/3 cup granulated sugar 1 cup all-purpose flour 1 tablespoon vanilla 2/3 cup chopped pistachios Preheat oven to 350 degrees. Beat the butter with an electric mixer until creamy, then add 1/3 cup granulated sugar until well blended. Gradually add the flour on low speed until blended. Stir in 1 teaspoon vanilla and pistachios, then press into bottom and 1 and 1/2 inches up sides of a 9 inch spring form pan. Bake at 350 degrees about 12 to 15 minutes or until golden then remove from the oven and set aside to cool. Filling: 4 (8 ounce) packages of softened cream cheese 1 and 1/2 cups granulated sugar 4 eggs 1 (12 ounce) package semi-sweet chocolate chips With an electric mixer, beat the cream cheese at medium speed until light and fluffy. Gradually add 1 and 1/2 cups granulated sugar, beating well. Add eggs 1 at a time, and beat just until blended. Stir in remaining 2 teaspoons vanilla. Pour half of batter into crust. Sprinkle the chocolate chips to within 1/2 inch of edge. Pour in the remaining batter and spread over the chocolate chips. Place cheesecake on a baking sheet and bake at 350 for 1 hour or until set. Remove from the oven, loosen cake from the edges of the pan with a sharp knife and cool on a wire rack 1 hour. Remove the rim of the pan and serve slightly warm. May garnish with whipped topping or shaved chocolate if desired.
