Baked Cheesecake Recipe

Baked Cheesecake Recipe Crust:

1 1/4 cups graham cracker crumbs

1/4 cup sugar

1/3 cup melted butter

Combine graham cracker crumbs, sugar, and butter. Press mixture firmly into the bottom of a 9" springform pan and set aside.

Filling:

3 (8 ounce) packages cream cheese, softened

1 cup granulated sugar

3 large eggs at room temperature

1/2 cup sour cream

2 tablespoons lemon juice

1 tablespoon vanilla

1 cup sour cream

3 tablespoons sugar

Preheat oven to 350 degrees. With electric mixer on medium speed, mix cream cheese and cup of sugar until well blended. Add eggs one at a time and blend well after each addition. Add sour cream, vanilla and lemon juice and blend well. Pour mixture into prepared crust.

Place an aluminum foil "tent" over the cake so it is not touching it to prevent overbrowning.

Bake at 350° for 50 minutes and remove the foil "tent". Continue baking for 20 minutes or until top is set.

Combine sour cream and 3 tablespoons sugar. Remove cheesecake from oven and immediately spread sour cream mixture over the top. Return cheesecake to oven for 5 minutes to set topping and then remove from oven.

Use a sharp knife to loosen cake from sides of pan but don't remove the rim. Cool on wire rack until room temperature. Refrigerate for at least 4 hours before removing rim and serving. Garnish as desired.
