Best White Chocolate Cheesecake

Best White Chocolate Cheesecake Crust:

1 and 1/2 cups crushed shortbread cookies

1/4 cup ground almonds

2 tablespoons granulated sugar

1/4 teaspoon almond extract

3 tablespoons melted butter

Preheat oven to 400 degrees. Combine the crumbs, almonds, sugar, estract and butter, then press into the bottom of a 9 inch spring form pan. Bake at 400 degrees for 6 minutes then remove from oven and set aside to cool.

Filling:

6 ounces gourmet white chocolate

4 (8 ounce) packages of cream cheese, softened

5 large eggs at room temperature

3/4 cup granulated sugar

3 tablespoons flour

1 teaspoon vanilla

1/4 teaspoon almond extract

Decrease the oven temperature to 325 degrees. While melting the white chocolate, take an electric mixer and beat the cream cheese, sugar, flour, vanilla and almond extract until well blended. Add the eggs one at a time, blending well after each addition. Combine the cream cheese mixture with the melted chocolate until well blended.

Pour over the crust and bake at 325 degrees for 40 minutes. Remove from the oven and loosen the cake from the edges of the pan without removing the rim. Cool to room temperature then refrigerate for several hours before serving.
