Bleu Cheesecake



Bleu Cheesecake Crust:

1/4 cup bread crumbs

1/4 cup Parmesan cheese

Combine the bread crumbs and parmesan. Sprinkle them into a greased 9 inch spring form pan and set aside.

Filling:

2 (8 ounce) packages cream cheese,softened

4 eggs

1/3 cup heavy cream

3 drops tabasco sauce

1/2 of a medium onion, chopped

1/2 pound finely chopped bacon

1/2 pound bleu cheese

Preheat the oven to 325 degrees. Cook bacon in a skillet until crisp, then drain on a paper towel. Saute the onion in 1 tablespoom of the bacon grease and set aside to cool slightly.

With an electric mixer, beat the the cream cheese until smooth. Add the cream, eggs and tabasco sauce until well blended. Then add the onions, bacon and blue cheese and blend well.

Pour mixture into the prepared pan.

Wrap aluminum foil around the outside of the pan and place it in a larger pan with about two inches of water in it.

Bake at 325 degrees for 1 hour and 30 minutes then turn off oven and crack the door. Remove the cheesecake from the larger pan and leave cheesecake pan in the oven for about 30 minutes or until you are ready to serve.
