Brownie Bottom Cheesecake
Brownie Bottom Cheesecake Crust: 1 (8 ounce) package of brownie mix Preheat oven to 350 degrees. Prepare the brownie mix per package directions and pour the batter into a 9 inch spring form pan that has been sprayed with non-stick spray. Bake at 350 degrees for 15 minutes. You can also prepare your own
crust
if you prefer. Filling: 2 (8 ounce) packages of cream cheese, softened 2 eggs at room temperature 1/2 cup granulated sugar 1 teaspoon vanilla 1 cup melted milk chocolate chips With electric mixer on medium speed, combine the cream cheese, sugar and vanilla until well blended. Add the eggs one at a time and blend well after each addition. Pour the batter over the brownie crust and then spoon the melted chocolate over the cream cheese batter. Swirl the chocolate by running a knife through the batters several times to marble it. Bake at 350 degrees for 35 minutes and then loosen the cake from the edge of the pan but don't remove the rim. Cool to room temperature and then refrigerate for several hours before removing the rim and serving. Garnish with whipped topping if desired. Serves 12.
