Chocolate Silk Cheesecake

Chocolate Silk Cheesecake Crust:

1 cup crushed vanilla wafers

3 tablespoons granulated sugar

1/2 cup chopped pecans

1/4 cup melted butter

Preheat oven to 325 degrees. Combine the crumbs, sugar, pecans and butter. Press into the bottom of a 9 inch spring form pan and bake at 325 degrees for 10 minutes. Set aside.

Filling:

2 (8 ounce) packages cream cheese, softened

2 eggs at room temperature

1/2 cup packed brown sugar

3 tablespoons almond flavored liqueur or extract

1 (6 ounce) package semi-sweet chocolate chips, melted

With electric mixer on medium speed, combine the cream cheese and brown sugar until well blended. Add the eggs one at a time and blend well after each addition. Blend in the liqueur (or extract) and melted chocolate and pour over the crust. Bake at 325 degrees for 35 minutes.

Topping:

2 cups sour cream

2 tablespoons granulated sugar

Increase the oven temperture to 425 degrees. Combine the sour cream and granulated sugar. Spread over the cheesecake and bake at 425 degrees for 10 minutes.

Loosen the cake from the pan by running a sharp knife around the edges but don't remove the rim. Cool to room temperature and then refrigerate for several hours before removing the rim and serving.

Serves 12.
