Contact Me July 2010Hi my name is Briege, I am 15 years old. I have recently moved to Costa Rica with my family. I do not yet speak Spanish soI have been taking classes online. I have had much more free time on my hands so I convinced myself to bake. I like cheesecake so in my search I came across your page. Yesterday I made an Apple Nut Cheesecake, everyone seemed to enjoy it. I think I may have made a few mistakes, just not understanding andfollowing my assumptions. Here are my concerns: What exactly is a spring form pan? I just used a regular pie tin. The crust. When I pressed it into the pie tin I spread it up the side as much as possible. Is that the right way to do it?? When I added the topping it all looked really good and I could envision how it was going to turn out.. or how I wanted it to. I'm not sure if I might of left it in a little to long but it wasn't to pretty. The apples were sorta dry, and all together the topping wasn't to great. Also, I used a gas oven. Does thatmake a any difference? Although I am still questioning the results of my first attempt, I would like to make the Supreme Chocolate Chip Cheesecake, sounds delish!! If you could give me any advice on that. One more thing, this coming Sunday my family was invited to a picnic with my new boyfriends family, I want to bring a fewcheesecakes. what would you recommend? I'm very happy that you've been trying out different cheesecakes and that everyone seems to enjoy them. As for the spring form pan, it's a pan that has a separate bottom that the cheesecake sits on. A ring that has a spring on it sits over the bottom part and after the cheesecake is baked, the outer ring is removed and you can see the whole cheesecake like. If your cheesecake turned out using a regular pie tin, that's fine. The only thing is that it's difficult to take it out of a pie tin so you just have to cut pieces out of that. Gas ovens shouldn't make a difference but you should just keep an eye on how it's baking. I've never used a gas oven so I don't really know how it compares. As for the chocolate chip cheesecake, I think you'll like it. I really can't recommend and one cheesecake in particular because the recipes are all good and it depends on the flavor you are going for. One that I did get rave reviews for was the New York cheesecake but I guess I should say that usually any cheesecake I make is a hit. I would just say you should pick a few that appeal to you and have fun seeing how they turn out. As for the topping not turning out, maybe it had something to do with the oven and the time not being just right for the type of pan you were using. Best of luck with all of your cheesecakes.
