Cookie Dough Cheesecake Recipe
Cookie Dough Cheesecake Recipe Crust:1 and 1/2 cups crushed chocolate wafer cookies 2 tablespoons granulated sugar 1/4 cup melted butter Preheat oven to 350 degrees. Combine crumbs, 2 tablespoons sugar, and butter then press firmly over bottom and 1/2-inch up sides of a 9 inch spring form pan. Bake ats 350 degrees for 8 minutes. Remove from oven and set aside. Filling: 2 (8 ounce) packages cream cheese, softened 1 cup sour cream 1 cup granulated sugar 3 eggs at room temperature 1 teaspoon vanilla With an electric mixer mixer, beat the cream cheese until smooth. Blend in the sugar until blended. Blend in the sour cream and vanilla then add the eggs, one at a time and blend after each addition. Pour the mixture into crust and drop small scoops of cookie dough (recipe follows) evenly over cake and slightly press the dough beneath surface. Bake at 350 degrees about 40 minutes or until almost set. Spread topping (recipe follows) over hot cake and let it cool to room temperature after loosening the cake from the edges of the pan with a sharp knife but not removing the rim. Refrigerate at least 4 hours before removing the rim and serving. Serves 14. Cookie Dough: 1/4 cup softened butter 1/4 cup firmly packed brown sugar 1/4 cup granulated sugar 1 teaspoon vanilla 2 tablespoons water 1/2 cup flour 1 cup semi-sweet chocolate chips With an electric mixer blend the butter, brown sugar and granulated sugar. Add the 2 tablespoons water and 1 teaspoon vanilla. Blend in the 1/2 cup all-purpose flour and 1 cup semi-sweet chocolate chips. Topping: 1 cup sour cream 2 teaspoons granulated sugar 1 teaspoon vanilla Blend the 1 cup sour cream, 2 teaspoons sugar, and 1 teaspoon vanilla. Use as indicated above.
