Diabetic Orange Cheesecake
This diabetic cheesecake recipe is an easy, no bake dessert.
Diabetic Orange Cheesecake Crust:
1 cup fresh wheat bread crumbs
1/4 cup Bran
1/4 cup brown sugar substitute
1/2 teaspoon ground cinnamon
2 tablespoons butter, softened
Combine crumbs, bran, brown sugar substitute and cinnamon in a bowl. Combine softened butter by hand with the mixture until crumbly and press into the bottom of a 9 inch spring form pan.
Filling:
1 tablespoon unflavored gelatin
1/3 cup Water
2 cups 2% cottage cheese, small curd
2 tablespoon white sugar substitute
1 banana
1/3 cup orange juice
1 teaspoon orange peel
1 teaspoon lemon juice
Stir gelatin into water and heat over low heat and stir until dissolved. Cool to room temperature.
Combine cottage cheese, orange juice & rind, banana,
sweetener, lemon juice & dissolved gelatin in a blender and puree until smooth. Puree until smooth. Pour over prepared crust. Cover and refrigerate 4 hours or
until set. Before serving, loosen cake from edges of pan and remove the rim.
Serves 8.
