Diabetic Cheesecake Recipes

Now you can have your cake
and eat it too!

I think you will be pleasantly surprised by the diabetic cheesecake recipes included here. There is no reason to feel deprived when there are wonderful recipes like this available.

Years ago, diabetics were warned that they could not enjoy all the same great foods as everyone else. In recent years, that has all changed. We have learned that there is really no food that has to be excluded from a diabetics diet...this includes cheesecake!

The main thing to remember is "everything in moderation". Of course you can enjoy that piece of cheesecake. You just have to monitor your blood sugar and try to keep it at an acceptable level. A little extra exercise might not hurt either!

One of the key elements to a diabetic diet is lowering fat consumption. Sugar and carbohydrates no longer have to be completely avoided.

If great desserts are something you have always loved, you can still have your cake and eat it too with these diabetic cheesecake recipes.

I am not a diabetic and I have never personally tried any of the following recipes but they have been well rated by those who have.



Diabetic Lemon Cheesecake

Crust:

1 cup graham cracker crumbs

2 tablespoon light margarine, melted

Combine cracker crumbs and margarine; press into bottom of an ungreased 9 inch spring form pan. Set aside.

Filling:

3 (8 ounce) packages low fat cream cheese, softened

2 tablespoons all-purpose flour

1/4 cup granulated sugar

3 tablespoons fresh lemon juice

3/4 cup egg substitute

1 (8 ounce) carton sugar-free, fat-free lemon yogurt

Assorted fresh berries, optional

Beat cream cheese, flour and sugar until light and fluffy. Gradually add lemon juice and egg substitute. Beat well. Fold in yogurt. Pour into crust. Cover loosely with foil.

Bake at 350ºF. for 60-70 min. or until center is almost set.

Cool to room temperature. Refrigerate. Garnish with berries if desired.
