Easy Chocolate Chip Cheesecake Ingredients: 1 ready-to-use graham cracker crust 2 (8 ounce) packages of cream cheese, softened 1/2 cup granulated sugar 2 eggs at room temperature 1/2 teaspoon vanilla 3/4 cup mini semi-sweet chocolate chips Preheat oven to 350 degrees. With electric mixer on medium speed, combine the cream cheese, sugar and vanilla until well blended. Add the eggs one at a time and blend well after each addition. Stir in 1/2 cup of the chocolate chips. Pour into the crust and top the cheesecake with the remaining (1/4 cup) chocolate chips. Bake at 350 degrees for 40 minutes or until almost set. Cool to room temperature and then refrigerate for 3 hours. Serves 8.
