Frozen Peppermint Cheesecake Recipe Crust: 1 and 1/2 cup crushed chocolate sandwich cookies 1/4 cup granulated sugar 1/4 cup melted butter Combine crumbs, sugar, and margarine. Press onto the bottom and halfway up the sides of a 9 inch spring form pan. Set aside. Filling: 1 (8 ounce) package cream cheese, softened 1 (14 ounce) can sweetened condensed milk (not evaporated milk) 1 cup crushed hard peppermint candy (may use those leftover Christmas candy canes.) 2 cups whipping cream, whipped Red food coloring, optional With an electric mixer on medium speed, beat the cream cheese until smooth. Gradually add the condensed milk until blended. Stir in the crushed peppemint candy and food coloring if desired. Fold in whipped cream and pour the mixture into the prepared pan. Cover and freeze at least 6 hours. Return any leftovers to the freezer. Serves 12.
