Fruit Cheesecakes

Fruit cheesecakes incorporate all the delicious wholesome tastes of various fruit with the decadent deliciousness of creamy cheesecake fillings. They could be baked or no bake but always made great tasting by the addition of fresh fruit and fruit flavors. I honestly can't think of a fruit flavor that would not enhance the taste of cheesecake.

I have fond memories of the cherry cheesecakes my mother used to make. Every now and then she would make a blueberry one but I don't think we could have imagined all the ways fruit, domestic as well as exotic, can be used.

Fruit is a very popular addition to cheesecakes not only in filling but as a yummy and colorful topping. The taste can be as light or heavy as desired when used in a recipe that has the texture you might desire. Check out the picture above for a mouthwatering example of a fruit cheesecake.


Obviously some of the desserts that I am referring to here as fruit cheesecakes are cheesecakes that have fruit either in the filling or are somehow used as a garnish to the almost finished product. I have also included some unbaked ones that also either incorporate the fruit into the filling or as a topping. A plain cheesecake can be dressed up with the addition of fruit or left plain for those that prefer it served that way.

Some of the recipes are also convenient bar recipes that add more versatility to the dessert. Fruit is a good addition to the recipes used in the low carb and diabetic cheesecake sections also. Almost any fruit or fruit flavor can create a delicious cheesecake. Even a chocolate cheesecake can be made more decadent by the incorporation of fruit into the recipe.

Whether you use fresh fruit or fruit medleys, fruit pie fillings or a creation made from a special recipe, you will have the perfect dessert. As with all of the other cheesecake recipes, the sky is the limit when it comes to what you can end up with.

Triple Delight Cheesecake

Crust:

1 cup graham cracker crumbs

1/2 stick melted margarine

1/2 cup firmly packed brown sugar

Preheat oven to 325 degrees. Combine crumbs, sugar and butter and press firmly into the bottom of a 9 inch spring form pan. Bake for 10 minutes at 325 degrees. Allow to cool

Filling:

4 eight ounce packages of softened cream cheese

1 cup granulated sugar

2 T. flour

1 t. vanilla

1 T. fresh lemon juice

1 T. fresh lime juice

1 T. fresh orange juice

4 eggs

1 t. grated lemon peel

1 t. grated lime peel

1 t. grated orange peel

With electric mixer on medium speed, combine cream cheese, sugar, flour and vanilla until well blended. Blend in the juices and the peel. Add the eggs, one at a time on low speed just until blended. Pour over the crust and bake at 325 degrees for one hour to one hour and five minutes or until the center is almost set. Take a sharp knife and run it around the edge of the cake pan to loosen the cake but don't remove the rim. Cool before removing the rim. Refrigerate at least 4 hours.

Serves 12




Pumpkin Marble Cheesecake has a gingersnap base and a baked pumpkin pie filling.

Berry Cheesecake combines several types of berries with the richness of sour cream and cream cheese.

Strawberry Cheesecake is a baked cheesecake with strawberries and a sour cream topping.

Blueberry Cheesecake is a baked cheesecake with blueberry sauce swirled into it. It has a sour cream topping and a blueberry glaze.

Cherry Cheesecake is a baked cheesecake with a cherry pie filling topping and is a good choice if you are looking for fruit cheesecake recipes.

Peach Amaretto Cheesecake has peaches and amaretto in the filling which is over a pie crust like base.

Another Cherry Cheesecake has almond extract and sour cream in the filling over a sugar cookie base. The cherry pie filling is baked onto the cheesecake for a short amount of time.

Apple Nut Cheesecake has an apple, nut and cinnamon topping baked onto the creamy cheesecake filling.

Lemon Cheesecake has lemon flavor baked right into the cheesecake. It is topped with a lemon glaze before serving.

A batter made with a combination of cream cheese and cottage cheese is baked, then topped with a cooked mixture of raspberries, cinnamon and more before cooling and serving Raspberry Cinnamon Cheesecake

Creamy Orange Cheesecake has a baked orange flavored filling and a sour cream topping.
