Hawaiian Cheesecake

Hawaiian Cheesecake Crust:

1 cup crushed vanilla wafers

1/4 cup melted butter

Preheat oven to 350 degrees. Combine crumbs and margarine and press onto bottom of 9inch spring form pan. Bake at 350 degrees for 10 minutes. Set aside to cool.

Filling:

2 (8 ounce) containers cream cheese, softened

1/3 cup granulated sugar

2 tablespoon milk

2 eggs at room temperature

1/2 cup toasted macadamia nuts

1 (8 and 1/2 ounce) can crushed pineapple, drained

1 kiwi, peeled and sliced

With electric mixer on medium speed, combine cream cheese, sugar and milk, until well blended. Add eggs one at a time and blend well after each addition. Stir in nuts and pour over crust. Bake at 350 degrees for 45 minutes.

Loosen cake from edge of pan with a sharp knife but don't remove the rim of pan. Cool to room temperature and then refrigerate for several hours.

Before serving, remove rim of the pan and garnish with the pineapple and kiwi.

Serves 12.
