highs and lows

The last time I made a cheesecake was well over 10 years ago- it was tall and thick and creamy and rich. I tried to make one last night and it's pathetically thin in comparison and the middle seems to have sunken a tad.
What did I do wrong and how do I improve the height of my cheesecakes?

I would say that cheesecakes that call for 2 or 2 and 1/2 pounds of cream cheese are usually higher because of the increase in amount of the cream cheese.

I think a cheesecake that might be similar to what you're looking for would be a New York Style cheesecake. They are usually higher, thick and creamy. I good one to try would be one of the New York style recipes under the plain cheesecake section of my website.
