I have lived in Minnesota and Iowa and never have a problem with my cheesecake with heat. Although, if I make one in the summer the air would be on. I have trouble with carmels in summer but not cheesecakes.

I work at safe way and just made my first cheesecake. I used Lucern and it turned out just fine. I don't know if that is available to you, but it worked great for me.
