Hot weather and baking...

Hi there...

Thank you for taking the time to read my question. I just moved from a colder climate Canada to Latin America. I used (USED) to make a great cheesecake. The hot weather seems to be quite the challenge to get cheese at right temperature. Any suggestions at all? I am also thinking to open a small cheesecake shop, but the price of Philly is crazy down here. Any suggestions would be helpful.

As for substituting for Philly, you might want to experiment but make sure you use a good quality cream cheese to ensure a great taste. I haven't tried other brands but there may be some out there that are just as good as Philly.

If cost of ingredients is what is a concern for you, you might want to keep in mind that people don't seem to mind paying a higher price for a really good quality cheesecake.

As for the heat, that shouldn't make too much of a problem if you just cool to room temperature and then refrigerate until serving.

Good luck with finding a recipe that works for you and I hope you have success if you decide to open a cheesecake shop. I'd love to see some pictures if you start making and selling cheesecakes.
