Keeping cheesecakes fresh

My fiancé has a fruit and produce store. Some of his regulars had requested to sell cakes using their own fruit so he asked if I would be interested in making them. Do you have any tips as far as storing them? How would you keep them fresh tasting and looking? Thank you!
