Little Cheesecakes

Little Cheesecakes Ingredients:

2 (8 ounce) packages cream cheese, softened

3/4 cup granulated sugar

2 eggs at room temperature

1 teaspoon vanilla

1 box vanilla wafers

Directions:

Preheat oven to 350 degrees. With electric mixer on medium speed, blend the cream cheese and sugar together until well blended. Add the eggs, one at a time, and beat well after each addition. Blend in the vanilla.

Put a vanilla wafer in bottom of cupcake foils. Pour mixture in each and bake for 15 minutes on 350 degrees. Place in refrigerator several hours to chill. Garnish with fresh fruit of choice if desired before serving. Add fruit before you serve.
