Luscious Lime Cheesecake Recipe Crust: 1 and 1/4 cup zwieback crumbs 2 tablespoons granulated sugar 1/3 cup melted butter Preheat oven to 325 degrees. Combine crumbs, sugar and butter and press into the bottom of a 9 inch spring form pan and bake for 10 minutes. Set aside to cool. Filling: 2 (8 ounce) packages of cream cheese, softened 3 eggs, separated 1/4 cup lime juice 1/2 cup granulated sugar 1 and 1/2 teaspoons grated lime peel 1 envelope unflavored gelatin 1/4 cup cold water 2 cups frozen whipped topping, thawed Heat gelatin in water over low heat until dissolved. Beat egg yolks and blend into the dissolved gelatin along with the lime juice, 1/4 cup of the sugar and the lime peel. Cook the mixture for about five minutes and then allow to cool. With electric mixer on medium speed, beat the cream cheese until smooth. Gradually add the gelatin mixture to the cream cheese until well blended. Beat the egg whites until foamy and then gradually add the remaining sugar. and continue beating until stiff peaks form. Fold the egg whites and whipped topping into the cream cheese mixture and pour over the crust. Chill until firm. Serves 12.
