Milk Chocolate Cheesecake Recipe Crust: 2 cups crushed vanilla wafers 1 cup ground toasted almonds 1/2 cup granulated sugar 1/2 cup melted butter Combine crushed cookies, almonds, sugar and butter and press firmly onto bottom and 2 inches up side of ungreased 9-inch springform pan. Set aside Filling: 2 (8 ounce) packages cream cheese,softened 1/2 cup milk 2 cups milk chocolate chips 1 envelope unflavored gelatin 1/2 cup sour cream 1/2 teaspoon almond extract 1/2 cup whipping cream, whipped Melt chocolate chips in microwave on medium power until smooth. Stir at 30 second intervals to assist in the melting process. Put gelatin and milk in small a saucepan and heat on low, stirring constantly until dissolved. Remove from heat. With electric mixer on medium speed, combine cream cheese, sour cream and melted chocolate until smooth and fluffy. Beat in the gelatin mixture and almond extract and then fold in whipped cream. Pour into crust and chill for about 3 hours or until firm. Loosen cake from edges of pan and remove the sides before serving. Serves 12.
