Mini Strawberry Cheesecakes
Mini Strawberry Cheesecakes Crust:
1 and 1/4 cup graham cracker crumbs
1/4 cup butter, melted
Combine above and press into the bottoms of 12 cupcake papers place in muffin tin and set aside.
Filling:
1 (8 ounce) package of cream cheese, softened
1/2 cup sugar
2 egg yolks
1 and 1/4 cup plain yogurt
1 tablespoon unflavored gelatin
2 tablespoons water
With electric mixer on medium speed, mix cream cheese, sugar, egg yolks and yogurt until smooth. Combine gelatin with water in a small saucepan and simmer until gelatin is completely dissolved. Stir into the cream cheese mixture and spoon filling into prepared crusts. Refrigerate about 3 hours or until set.
Garnish with fresh strawberries and whipped cream.
Serves 12.
