Mini Strawberry Cheesecakes??

I noticed that the mini strawberry cheesecakes in the picture did not have the paper still on them. I was wondering if you took the paper off each mini cheesecake for the picture. I have to make 200 of these for a reception. Each of the mini cheesecakes will be on a small plate and they don't want the paper on them. Also, do these freeze well?

Susan,

I didn't make those cheesecakes, but the paper usually comes off pretty easily after they are chilled for several hours.

They should freeze and thaw quickly when you are ready to use them. I would try to use them within several months.

Good luck with your baking. It will be a wonderful treat for the reception.
