Mocha Swirl Cheesecake Recipe
Mocha Swirl Cheesecake Recipe Crust:
1/4 cup cake flour
2 tablespoons granulated sugar
1/2 teaspoon grated lemon zest
2 1/2 tablespoons cold light butter, cut into bits
1 tablespoon fat-free egg substitute
Place cottage cheese in a fine-mesh sieve or cheesecloth set over a bowl for about an hour to drain out excess liquid. Discard liquid. Meanwhile, preheat oven to 400 degrees.
Combine flour, sugar and zest. Add butter until mixture resembles coarse crumbs. Mix in the egg substitute egg until dough starts to clump.
With floured hands press the dough onto the bottom of a 9 inch spring form pan which has been sprayed with non stick cooking spray. Bake at 400 degrees for 8 minutes then set aside to cool on a wire rack. Decrease oven temperature to 350 degrees.
Filling for Mocha Swirl Cheesecake Recipe:
2 (8 ounce) packages light cream cheese, softened
1 and 1/2 pounds fat free cottage cheese
3⁄4 cup plus 2 Tbsp sugar
1⁄4 cup cake flour
1⁄2 cup fat-free sour cream, at room temperature
2 teaspoons vanilla extract
1 teaspoon grated lemon zest
3⁄4 cup fat-free egg substitute, at room temperature
1 1⁄2 tablespoons unsweetened cocoa powder
2 teaspoons instant espresso powder
With an electric mixer beat the cream cheese until smooth. In a separate bowl beat the cream cheese until smooth then blend in the 3/4 cup sugar and flour until well blended.
Beat in the cottage cheese, sour cream, vanilla and lemon zest. Add the egg substitute just until blended. Reserve 1⁄2 cup filling in a small bowl and pour remaining filling over crust.
In a small bowl, mix remaining 2 tablepoons sugar, cocoa, espresso powder and 2 tablespoons hot water until blended and smooth. Stir into the reserved 1⁄2 cup filling. Spoon this over the filling in the crust and pull a knife through to create swirls.
Cover the outside of the pan with foil and place in a water bath (the spring form pan in a larger pan with water one inch up the sides of the foil covered spring form pan.) cheesecake pan in larger baking pan and place on oven rack. Place in oven and bake at 350 degrees for 55 minutes or almost set.
Remove cake from the oven and loosen the cake from the pan edges with a sharp knife without removing the rim. Cool to room temperature then refrigerate for at least 6 hours before removing the rim and serving for dessert.
