Orange Butterscotch Cheesecake Recipe

Orange Butterscotch Cheesecake Recipe Crust:

1 and 1/4 cups uncooked either old fashioned or quick oats

1/4 cup packed brown sugar

1/4 cup melted butter

2 tablespoons flour

Preheat oven to 350 degrees. Mix together the oats, brown sugar, flour and margarine and press into the bottom of a 9 inch spring form pan. Bake at 350 degrees for 15 minutes. Set aside to cool.

Filling:

3 (8 ounce) packages cream cheese, softened

3/4 cup granulated sugar

4 eggs at room temperature

2 teaspoons grated orange peel

1 teaspoon vanilla

Decrease oven to 325 degrees. With electric mixer on medium speed, combine the cream cheese, sugar, orange peel and vanill. until well blended. Add the eggs one at a time and blend well after each addition.

Pour over the crust and bake at 325 degrees for 1 hour and 5 minutes. Remove from oven and loosen cake from edge of pan with a sharp knife but don't remove the rim.

Topping:

1/2 cup packed brown sugar

1/3 cup light corn syrup

1/4 cup melted butter

1 teaspoon vanilla

Combine the brown sugar, corn syrup and butter in a saucepan and bring to a boil, stirring constantly. Remove from the heat and stir in the vanilla. Chill until slightly thickened and spoon over the cheesecake. Refrigerate the cheesecake for 3-4 hours before removing the rim and serving.

Serves 12.
