Peach Amaretto Cheesecake

Peach Amaretto Cheesecake Crust:

3/4 cup flour

1/3 cup granulated sugar

3 tablespoons butter

1 egg

Preheat oven to 450 degrees. With electric mixer on medium speed, combine the butter and sugar until light and fluffy. Blend in the egg and add the flour, mixing well. Spread the dough into the bottom of a 9 inch spring form pan and bake at 450 degrees for 10 minutes. Set aside.

Filling:

3 (8 ounce) packages of cream cheese, softened

3 eggs at room temperature

3/4 cup granulated sugar

3 tablespoons flour

1 (16 ounce) can of peaches, drained and pureed.

1/4 cup amaretto

With electric mixer on medium speed, combine the cream cheese, sugar and flour until well blended. Add the eggs one at a time and blend well after each addition. Add the pureed peaches and the amaretto until well blended. pour over the prepared crust. Bake at 450 degrees for 10 minutes and then reduce the oven temperature to 250 degrees and continue baking for 1 hour and 5 minutes.

Remove cake from the oven and loosen the cake from the pan with a sharp knife but don't remove the rim. Cool to room temperature and then refrigerate for several hours.

Remove rim of the pan before serving.

Serves 12.
