Plain Low Carb Cheesecake

Plain Low Carb Cheesecake Crust:

1 and 1/4 cup finely chopped walnuts

3 tablespoons melted butter

Preheat oven to 350 degrees. Spray a 9-inch springform pan with nonstick cooking spray and set aside. Mix the walnuts and melted butter and press into the bottom of the pan. Bake for 10 minutes at 350 degrees. Set aside to cool.

Filling:

1 (8-ounce) package regular cream cheese

2 (8-ounce) packages fat-free cream cheese

1 cup sugar substitute

2 eggs at room temperature

2 teaspoon of vanilla

1 tablespoon of flour

With electric mixer on medium speed, blend the cream cheeses together until smooth and creamy. Add the sugar substitute, flour and vanilla and blend well. Add the eggs one at a time and beat until well blended and smooth Pour into prepared crust.

Bake at 350 degrees for 50 to 60 minutes or until mixture is almost set. Run a knife around edge of pan to release sides but don't remove the rim. Cool to room temperature and then cover cover and refrigerate at least 8 hours.

Serves 12

Approx less than 10 grams of Carbs per serving
