Praline Cheesecake Recipe


Praline Cheesecake Recipe Crust:

1 box Nilla vanilla wafers, divided

1/4 cup granulated sugar

1/4 cup melted butter

Preheat oven to 325 degrees. Crush 60 of the wafers and mix with the sugar and margarine. Press firmly onto the bottom of a 9 inch spring form pan. Take 16 whole wafers and press upright into the crust all around the edge of the pan, pressing gently into the crust to make sure they remain upright. Set aside.

Filling:

3 (8 ounce) packages of cream cheese, softened

1 cup granulated sugar

1/2 cup sour cream

3 eggs at room temperature

1 teaspoon vanilla

With an electric mixer, beat the cream cheese until smooth. Add the sugar until well blended, then beat in the vanill and sour cream. Add the eggs, blending after each one and then pour the mixture into the prepared crust.

Place the spring form pan on a cookie sheet and bake at 325 degrees for 45 minutes or until almost set. Remove the cake from the oven and loosen the cake from the edges of teh pan without removing the rim. Cool to room temperture, then refrigerate forat least 4 hours.

Topping:

35 unwrapped caramels

3 tablespoons milk

1/2 cup toasted pecan pieces

Melt the caramels and milk in the microwave on high for 1 minute or until melted and smooth. Stir every 30 seconds until completely melted.

Prior to serving, remove the rim from the pan and pour the melted caramel mixture over the top. Sprinkle evenly with the toasted pecans.

Serves 16.
