Rocky Road Cheesecake Recipe

Rocky Road Cheesecake Recipe Ingredients:

1 ready-to-use chocolate graham cracker crust (or plain graham cracker ready-to-use if desired)

1/4 cup cold water

1 envelope unflavored gelatin

2 (8 ounce) packages of cream cheese, softened

1/3 cup cocoa

3/4 cup granulated sugar

1/2 teaspoon vanilla

2 cups miniature marshmallows

1 cup whipping cream, whipped

1/2 cup chopped nuts, of choice

Dissolve the gelatin in the water over low heat, stirring constantly until dissolved. With electric mixer on medium speed, combine the cream cheese, sugar, cocoa and vanilla until well blended. Gradually add the dissolved gelatin until well blended.

Fold in the marshmallows, nuts and whipped cream and pour into the crust. Chill until firm.

Serves 12.
