Storage/Freezing

by Susan
(California)

I've successfully made several types of cheesecakes and always have requests during the holidays. Normally, I would bake them 1 or 2 days ahead of time. This year, I'd like to bake them about 5 days ahead of time. Would they still be fresh or should they be frozen? Can you freeze the type with a baked sour cream topping? Would you recommend plastic wrap or nonstick foil?

Thank you.
