Strawberry Cheesecake

Strawberry Cheesecake Crust:

1 cup graham cracker crumbs

1/4 C. butter, melted

Mix crumbs and butter and press into a 10 inch pie plate to form crust.

Filling:

1 and 1/2 (8 ounce) packages cream cheese, softened

3 eggs at room temperature

3/4 cup granulated sugar

1/2 teaspoon vanilla

Preheat oven to 350 degrees. With electric mixer on medium speed, mix cream cheese and sugar until smooth. Add eggs one at a time, blending well after each addition. Add vanilla and mix. Pour into unbaked graham cracker crust and bake 30 minutes at 350 degrees. Set aside to cool while preparing the sour cream topping.

Topping:

1/2 pint sour cream

1/2 cup granulated sugar

1/2 teaspoon vanilla

Mix sour cream, sugar and vanilla and pour on top of cheesecake. Bake 15 minutes more at 350 degrees. Set aside to cool.

Strawberry Topping:

1 and 1/2 tablespoons strawberry gelatin

1 and 1/2 tablespoons cornstarch

1/2 cup hot water

1/2 cup granulated sugar

1 pint fresh strawberries, sliced

Mix cornstarch, gelatin, hot water and sugar. Cook over medium heat until thickened and then allow to cool. Add sliced strawberries and spread over cheesecake. Chill until ready to serve.

Serves 8.
