Sublime Cheesecake:

Sublime Cheesecake Crust:

1 and 1/2 cups all-purpose flour

1/3 cup granulated sugar

1 egg at room temperature, lightly beaten

1/2 cup butter, softened

Preheat oven to 400 degrees. Spray a 9 inch spring form pan with non-stick spray. Combine the above four ingredients and press into the bottom of the greased pan. Prick several times with a fork and bake for 15 minutes at 400 degrees. Set aside to cool.

Filling:

5 (8 ounce) packages cream cheese, softened

1 and 3/4 cups granulated sugar

5 eggs at room temperature

3 tablespoons all-purpose flour

2 egg yolks

1/4 cup heavy whipping cream

Increase oven temperature to 475 degrees. With an electric mixer on medium speed, combine the cream cheese, sugar and flour until well blended. Add the eggs and egg yolks, one at a time and mix well after each addition. Add the cream and mix only enough to blend.

Pour the mixture over the cooled crust and bake for 10 minutes at 475 degrees. Reduce temperature to 200 degrees and continue to bake for one hour. Turn oven off, but leave cake in for another hour. May still be slightly jiggly in the center.

Remove from oven and loosen cake from pan with a knife but don't remove the rim. Cool to room temperature and chill for at least four hours in the refrigerator.

Remove rim of pan before serving. May serve plain or garnish as desired.
