Ultimate Chocolate Cheesecake
Ultimate Chocolate Cheesecake Crust:2 and 1/2 cups crushed chocolate cookies 1/4 cup granulated sugar 1/2 cup melted butter Preheat oven to 300 degrees. Wrap aluminum foil around the outside of a 9 inch spring form pan. Combine the cookie crumbs, granulated sugar and melted butter until the mixture is well combined. Press firmly onto the bottom of the prepared pan. Filling: 3 (8 ounce) packages of cream cheese, softened 1 and 1/2 cups granulated sugar 1 teaspoon grated orange zest 2 teaspoons vanilla extract 3 tablespoons flour 1/3 cup heavy cream 5 large eggs at room temperature 6 ounces white chocolate, melted 6 ounces dark chocolate, melted Extra white and dark chocolate for garnish if desired Melt the white chocolate and dark chocolate separately using a double boiler. Stir the chocolates until smooth and set aside. With an electric mixer, combine the cream cheese and sugar until smooth and blended. Add the eggs one at a time, and blend well after each addition. Blend in the orange zest, flour, heavy cream, and vanilla untile well blended. Pour three cups of the batter into a separate mixing bowl. Add the melted white chocolate and blend well. Blend the dark chocolate into the remaining batter in the original mixing bowl. Randomly spoon the dark chocolate and white chocolate mixtures into the prepared pan. With a clean knife, swirl the dark chocolate mixture into the white chocolate mixture. Set the cheesecake pan on a baking sheet and bake for 1 hour and 20 minutes, or until the cheesecake is almost set. Remove from the oven and cool at room temperature for an hour after loosening the cake from the edges of the pan. Refrigerate for 3-4 hours. Garnish with white chocolate and dark chocolate shavings if desired. Serves 14.
